If there was a sale on summer strawberries at the farmers market the other day and you bought more fruit than you can use right now, you'll need to store those juicy red morsels for the weeks or months ahead. You can freeze your fresh berries and use them later for a frozen fruit salad, as pancake toppers or in strawberry shortcake. Get some sugar and freezer containers, and you'll have that summer delight in cold storage in no time. Does this Spark an idea?

  • Large bowl
  • Wooden spoon
  • Sugar
  • 1-quart freezer containers

Instructions

      Pick out your strawberries. You can do this at a supermarket or pick them yourself if you live near a farm that lets you pack your own baskets at reduced rates.

      Wash your strawberries in a sink full of cold water.

      Cut off the green tops and place the fruit into a large bowl.

      Slice the strawberries into halves or quarters (if they are large).

      Sprinkle sugar and mix, repeating until they are sweet enough for you. You can figure on about three-quarters of a cup of sugar per quart. Some juice will remain in the bowl because slicing them, adding the sugar and stirring tend to soften the fruit.

      Scoop the berries with your measuring cup into 1-quart freezer containers. Leave 1 inch on top free for the expansion that comes with freezing.

      Freeze the fruit for up to a year. Make sure to date the top and write the contents if you plan to make another batch.
