How to Eat BBQ Chicken for a Week
Chicken can be a very economical source of protein. So when a large package of fresh boneless, skinless chicken breasts goes on sale for anything under $2 a pound, you'll want to figure out how to use all the chicken up, while making mealtime more convenient throughout the week (a work week of five days as you wouldn't want to eat chicken much older that that). Things You'll Need
- A large package of fresh boneless skinless chicken breasts. Our package had about 6-7 large breasts.
- BBQ Sauce
- Tortillas
- Rice
- Rice-O-Roni
- Hot Sauce
- Tortilla Chips

The first night, marinate all the chicken in BBQ sauce and either bake or grill it. That night you will eat BBQ chicken with whatever sides of choice. If baking, turn oven to 350 F and bake about 20 minutes or until no longer pink inside (check with a knife and fork). If Grilling, place chicken breasts over the hottest part of the flame to sear it on both sides, then remove from direct flame to another part of the grill and cook on indirect heat for 15 minutes or until no longer pink inside.

The second night, you will shred up 2 of the left over chicken breasts and make Chicken Enchiladas. (see resources for recipe). If there are leftover enchiladas from dinner, you can have these for lunch. (If using the recipe in the resources, you should also have left over shredded chicken that you can put back in the fridge after making the enchiladas).

The third night you will make Chicken Nachos supreme. This will be one of your easiest dinners. take some of that left over shredded chicken from when you made the enchiladas out of the fridge. Turn the oven to BROIL. Spread tortilla chips on a baking sheet, top with shredded BBQ Chicken and shredded cheese. For more variety you can add chopped green onions, chopped bell peppers, beans and/or olives. Place under broiler until cheese is melted. Serve with Sour Cream and Salsa. You can also sprinkle hot sauce over the cheese before putting in the oven.

The fourth night, make chicken burritos or chicken quesadillas. If you have shredded chicken left over from the enchiladas and nachos, use that or shred up some more from the fridge. Cook up a pot of rice. Fill burritos with rice and shredded chicken. Add cheese or other sauces as desired. For quesadillas, place some canola oil in a skillet and heat, then place a corn tortilla, add a layer of bbq chicken and shredded cheese, then add the top corn tortilla. Flip to fry on both sides. Serve with Franks Red Hot Sauce.

Tips & Warnings
Make sure to cook chicken all the way through, there should be no pink on the inside.
Don't eat chicken that is more that 5 days old.
