One of my e-how friends asked for a
Mexican recipe. Chilaquiles, which means herbs or greens in chile sauce, is a traditional Mexican dish. In Mexico Chilaquiles are thought to cure the common hang-over. There must be something in that hot spicy food!!

Difficulty: Moderately Easy
Instructions
  1. Step 1
     

    Ingredients:

    Olive Oil
    1 medium sized red onion, chopped
    4 cups cooked & chopped Turkey breast
    1 14 ounce diced green chiles
    1 bottle of medium/hot salsa (3 cups worth)
    3 cloves garlic, minced
    1 fresh tomato, diced
    chopped fresh cilantro
    2 cups crumbled queso fresco cheese or a Mexican blend cheese
    sour cream
    4 cups unsalted tortilla chips OR corn tortillas cut in quarters and fried

  2. Step 2

    Pre-heat oven at 450 degrees. Heat some oil in the bottom of a large pan. Add your chopped onion and garlic. Sauté until the onion softens. Add your turkey meat, green chiles and sauté. Stir in your salsa and season with some salt & pepper to taste.

  3. Step 3

    If you are not cooking in an oven safe pan, transfer ingredients to a oven safe dish. Stir in your chips or your fried and quartered corn tortillas. Cover with cheese. Bake in the oven until cheese is melted on the top. Garnish with your fresh tomato, cilantro and sour cream.
    ENJOY! So good!

Tips & Warnings
  • A nice wine pairing with this meal is a Zinfandel
