Turkish coffee is the original coffee, perfected over five hundred years ago in the geographical region now known as Turkey. It is still the primary way coffee is served in much of the world, especially the Middle East and parts of Africa.   • Coffee beans
  • Coffee grinder
  • Turkish coffee pot (AKA a cezve or ibrik)
  • Teaspoon
  • Water
  • Demitasse cup
  • Sugar (optional)

Instructions

      Grind coffee beans, the fresher the better, into a fine, flour-like powder. If you don't grind your own beans, make sure whoever does knows it's for Turkish coffee and check to make sure it's finely ground.

      Using the demitasse cup that you intend to drink your coffee from, measure out your water. Most Turkish coffee pots are big enough for one or two cups. Fill your cup once or twice (depending on how many cups you're making) and pour into the pot.

      Add two teaspoons of coffee to the pot. If you are sweetening your coffee, now is also the time to add one to two teaspoons of sugar.

      Heat your coffee. This is accomplished by putting the pot directly over the heating element. Some people use an intermediary such as a cast iron surface or a pan full of sand to help it heat evenly.

      Stir occasionally until just under boiling, then pour into cups and serve. The grounds will sink to the bottom of the cups and should not be consumed.
