Learn how to make a fresh, cooling summer sorbet bursting with flavors of berries and citrus. You can use any combination of berries you like as long as you stick with the measurements. This is a delightful dessert to serve your guests and is gluten and dairy free.

Instructions

Things You'll Need:

  • Ice Cream Freezer
  • Food Strainer (if using blackberries)
  • 1/2 pound strawberries
  • 1/2 cup blackberries
  • Juice of one orange
  • Juice of 1/2 lemon
  • 1 1/2 cup cold water
  • 3/4 cup sugar
  • 1/4 cup corn syrup
  1. Step 1
     

    Hull and slice the strawberries and place in a mixing bowl.

  2. Step 2
     

    Place the blackberries in a strainer and smash them with the edge of a spoon. The blackberry pulp will end up on the outside bottom of the strainer and the seeds will be left inside. Scrape the pulp from the outside of the strainer and place in the mixing bowl with the strawberries.

  3. Step 3
     

    Juice the orange and 1/2 lemon and place in the mixing bowl with the strawberries and blackberries.

  4. Step 4

    Add the sugar to the mixing bowl with the berries, orange and lemon juice. Stir, cover and refrigerate for at least one hour.

  5. Step 5
     

    When ready to freeze the sorbet, mash the berries in the mixing bowl until pureed. Add the corn syrup and water and stir until blended.

  6. Step 6
     

    Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions. Serve immediately. *See tips below

Tips & Warnings
  • Makes one quart
  • You can use any combination of berries. If the berries have seeds and you want to remove them, use the strainer method in Step 2 above.
  • Frozen berries also work well in this recipe.
  • These are beautiful served in a martini glass with extra berries sprinkled on top and you can even add a splash of rum or vodka to top it off.
  • If you don't eat the whole batch (I can't imagine why you wouldn't) put the rest in the refrigerator and serve the next day in a tall glass over ice with a lemon slice and a splash of sparkling water for a refreshing drink.
