Cognac, the most famous variety of brandy, derives its distinctive and sophisticated taste from the grapes Folle Blanche, Ugni Blanc or Colombard. French law requires that any liquor bearing the name "cognac" consists of at least 90 percent of one of these grapes, in keeping with the drink's 300-year-old production process.
