How to make the best Spinach Artichoke Dip

This is the Spinach Artichoke Dip I used to use when I was Executive Chef for a large catering company.

Difficulty: Easy
Instructions

Things You'll Need:

  • Fresh Spinach, Canned Small Artichoke Hearts, Mayo, Shredded Parmesan Cheese, Fresh Garlic, Salt, Black Pepper.
  1. Step 1

    Grab a large bowl and a spoon to mix.

  2. Step 2

    Coarse chop up some baby spinach leaves. A couple of handfuls is enough. Put 'em in the bowl.

  3. Step 3

    Drain a regular size can of small or medium size canned artichoke hearts. Chop the artichoke hearts well (pulse in a food processor a few times). Try to get out any big coarse pieces. Put 'em in the bowl.

  4. Step 4

    Spoon out about 1 cup of mayo (Hellmans is good). Add it to the artichokes and spinach

  5. Step 5

    Add a 12 oz bag of shredded parmesan (not grated) and add it to the ingredients.

  6. Step 6

    Finely chop a clove of fresh garlic. Use a microplaner is possible. Add it to the mix.

    Mix all of the above ingredients. Add more mayo if its too dry. Add more artichoke or spinach if its too wet. Enjoy with wheat crackers or triscuits.
    Don't forget to add Salt and Pepper to taste. Should be about 1 tsp of each.

  7. Step 7

    Finally, add all of the above to a buttered casserole dish and bake in a 350 degree oven until it is bubbly (about 45 minutes).

    You dont have to cook it, but it is better if you do.

Tips & Warnings
  • If you want a little kick add some hot sauce like Sri Racha or a little Tabasco sauce.
  • For garnish place inside a bowl over some red or green leaf lettuce.
