How to Make City Chicken

City Chicken is not chicken at all. It's a dish based on pork cubes, which is usually served over rice or mashed potatoes. The cubes are on skewers, and sliding the pieces of pork on the skewers is the most time-consuming part of making the dish. Does this Spark an idea?

Things You'll Need

  • 1 1/2 lbs. pork
  • 1 1/2 cups flour
  • 1 tbsp. vegetable oil
  • 2 cups chicken broth
  • Salt
  • Pepper
  • Frying pan
  • Skewers
  • Bowl

Instructions

      Cut 1 ½ lbs. of boneless white meat pork into 1-inch squares.

      Mix the flour in a bowl with the salt and pepper. Coat the pork cubes in this mix.

      Thread the pieces of pork on the skewers.

      Place a small bit of vegetable oil in a frying pan. Cook the skewered pork in the pan until it browns. Add the chicken broth, reduce the heat and cover the pan. Cook for 40 minutes or until the meat is tender.

  • Add spices like thyme or a bay leaf to the pan when you add the chicken broth.
