This sandwich is super easy to make, uses minimal dishes, and is low fat to boot! Try experimenting with different meats or omit them altogether and use egg substitute for an even healthier morning meal.

Difficulty: Easy
Instructions

Things You'll Need:

  • Small Bowl
  • Non-stick Spray
  • Salt/Pepper to taste
  • 2 Eggs
  • Turkey Bacon or Low-Fat Sliced Ham Lunch Meat
  • 1/2 oz Slice of Low Fat Cheese
  • Sandwich-Thin Roll
  1. Step 1

Put your sandwich thins in the toaster. You may need to keep an eye on them or put them in a little later if your toaster is quick. Mine toasts almost perfectly if I pop them in first.

  2. Step 2

Spray your small bowl with non-stick spray and crack the first egg into the bowl. When you crack the second egg, only add the egg white, save the yolk for another use or discard. Whisk the eggs until broken and combined.

  3. Step 3

Place the bowl in your microwave for 1 minute. At the end of the minute, place two pieces of ham lunch meat on the egg and microwave for another 30 seconds. If you are using turkey bacon, microwave the bacon separately based on package directions and add to sandwich during final assembly.

  4. Step 4

Add the slice of low fat cheese to the top of the ham or bacon. Pull your sandwich thins out of the toaster and place one side on top of the ham/egg combo in the bowl. Flip the bowl upside down and give a gentle tap until the egg releases from the bowl. Place the remaining slice of bread on the sandwich and enjoy!

Tips & Warnings
  • If you are using Weight Watchers, this sandwich is 4.5 points when using the low fat ham and 5 points when using one slice of turkey bacon.
