How to Make Cajun Salmon Croquettes/Soul Food

Salmon Croquettes are a family favorite at my house. Southerners love this fast and easy dish. These can also be enjoyed when prepared as finger foods for get togethers or a party by making the patties smaller.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 12 inch or better frying pan
  • spatula for turning
  • bowl for mixing
  • plate
  • shallow dish
  • small pot
  • paper towels
  • dish for cooked patties
  • and ingredients in recipe
  1. Step 1

    Ingredients:
    1 can Pink Salmon
    2 medium irish potatoes
    1 small onion (chopped)
    1 egg
    1/2 meduim bell pepper (chopped)
    1/3 cup green onions (chopped small)
    salt and pepper
    Canola or corn oil for frying
    1 cup flour to be used to roll patties in

  2. Step 2

    Peel the irish potatoes, wash and cut into large cubes. Put in pot and cover with water. Boil potatoes until a fork goes into them easily and they are done. Drain well and keep for later. While the potatoes are cooking open the can of Salmon. Drain well, pick out the bones and remove the skin or any undesirable matter from the fish.

  3. Step 3

    Place fish in bowl and mix with fork. Break egg into fish and mix well. Season the fish with salt, pepper or seasonall. In the south, we like to use "Tony's" or other creole seasonings. If you do so, omit the salt and pepper. Add the potato and mix well into the fish. Now add the bell pepper and green onions.

  4. Step 4

    Pour oil into skillet up to about 1/2 inch deep. Put the flour in a shallow dish mixing in a little salt and pepper. Put some flour on your hands to aid in shaping the croquettes. Shape the croquettes into patties the size you would make a homestyle hamburger. (see photo above). If croquette seems like it is not holding together well, add a little of the flour to it as you shape it. Roll the croquette in flour to coat it and carefully shake off excess flour. Place each pattie on a plate until you are ready to begin frying. Dust the plate with a little flour first. When you are ready for frying, turn the fire on med/hi heat. When oil is hot add croquettes one at a time carefully. Don't crowd. Leave room for turning. Fry patties until golden brown on under side then turn over using a metal spatula. A good idea is to flip the croquette away from you letting it land against another croquette in the pan. This will elliminate splash. When the croquettes are golden brown on both sides, take them up using the spatula and place them on paper towels on a plate to drain.

Tips & Warnings
  • Keep flouring your hands as you shape the croquettes to prevent the fish from sticking to your hands.
  • Croquettes can be eaten as a main course in a meal. Cole slaw goes well with this.
  • A croquette between two slices of bread makes an awesome sandwich. Add lettuce and tomatoes.
  • Croquettes are better when eaten hot.
  • Remember that croquettes are a great finger food when made much smaller.
  • Place croquettes into oil being careful not to splash and get burned. If you are more comfortable using a spatula to put them into the oil, do so. Safety first!!
