Things You'll Need

  • 1 cup uncooked rice
  • 5 tbsp. butter
  • 1 cup diced onion
  • 1 cup diced carrots
  • 2/3 cup chopped scallions
  • 3 tbsp. sesame seeds
  • 5 eggs
  • 5 tbsp. soy sauce
  • Salt
  • Pepper

Instructions

      Cook 1 cup of rice according to package directions.

      Heat a large skillet. Toast the sesame seeds in the dry pan for about 8 to 10 minutes. Shake the seeds in the pan often to prevent scorching. Set aside.

      Melt 5 tbsp. of butter in the same pan. Add onions, carrots and scallions when the butter is melted. Saute until the carrots are tender and the onions are translucent, about 5 to 7 minutes. Set aside on a separate plate and give the pan a quick wipe.

      Oil the skillet lightly, if needed. Beat five eggs and pour into the hot skillet. Cook as you would scrambled eggs, stirring the eggs frequently.

      Add the cooked rice, vegetables and sesame seeds to the eggs when they begin to firm up. Stir the mixture.

      Add the soy sauce and stir. Salt and pepper to taste.
