How to Make a Low Carb Rich Waffle with Coconut Flour

Who says you can't have waffles on your low carb lifestyle? This rich waffle is very low in carbs.

Because it is made with coconut flour, it is also gluten free and very filling. Rejoice! Waffles aren't off limits after all!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 tablespoons salted butter
  • 3 large eggs
  • 1/4 cup sugar-free Da Vinci Cookie Dough syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3 tablespoons coconut flour
  • Waffle iron
  • Oil or spray to grease iron
  • Medium microwave-safe bowl
  • Whisk
  • Spoon
  • Fork
  • Plate
  1. Step 1
    Waffle Iron

    Grease the waffle iron and plug it in to preheat while you make the batter.

  2. Step 2
    Melt Butter
     
    Melt Butter

    Microwave the butter in the medium bowl just until the butter is melted.

  3. Step 3
    Whisk Eggs

    Whisk the eggs into the butter until they are well combined.

  4. Step 4
    Cookie Dough Syrup
     
    Cookie Dough Syrup

    Whisk in the syrup, salt, and baking powder, in that order. Whisk until smooth after each addition.

    Add Coconut Flour

    Whisk in the coconut flour until the batter is smooth and no lumps remain.

    Let the batter sit for a few minutes to thicken.

    Spread Batter in Iron

    Spread the batter in the preheated waffle iron with the spoon, making sure to cover the entire surface. Close the lid to bake the waffle.

    When the waffle is as brown as you like it, remove it to the plate with the fork. (If you are using a large waffle iron, fold the waffle in half before removing it.)

    Top the waffle with your favorite low carb toppings.

Tips & Warnings
  • This makes 1 large waffle or 2 small round waffles.
  • The entire recipe contains about 3 net carbs.
  • I use a George Forman Grill with waffle plates.
  • You may be able to find sugar-free Da Vinci syrups at your store or you can order them online.
  • Make sure to let the batter thicken before baking.
  • Add the carb count for any toppings you use.
