Making a good chocolate cake with icing is easy, but making a TO DIE FOR triple chocolate cake with homemade vanilla chocolate chip icing is just as easy! Even the non-bakers can make this and wow their family and friends!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 box chocolate cake
  • 1 small box chocolate instant pudding
  • 1 12 oz package chocolate chips
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cup water
  • 4 cups powdered sugar
  • 1/2 cup softened butter
  • 1/2 cup shortening
  • 1 1/4 tsp vanilla extract
  • Milk or water to thin icing
  1. Step 1

Preheat oven to 325 degrees. Get out 9 x 13 baking pan. Spray pan with cooking spray or grease with butter or shortening.

  2. Step 2

Mix in large bowl: chocolate cake mix, box of instant chocolate pudding, 6 oz chocolate chips (1/2 of package), 4 eggs, 1/2 cup of oil, 1 1/2 cups of water.

  3. Step 3

Beat for 2 minutes on medium speed. Then pour into 9 x 13 baking dish. Put in oven for 30 to 40 minutes. When done, a toothpick or fork should come out clean. Hard to tell though sometimes when melted chocolate chips stick on toothpick or fork. Poke around and make best judgement. Take out of oven when done to cool.

  4. Step 4

Icing: Mix 1/2 cup shortening, 1/2 cup (1 stick) softened butter, 1 1/4 tsp vanilla extract. Now mix in the 4 cups of powdered sugar one cup at a time. When all the sugar is mixed in, add water or milk by the tablespoon until you get a creamy consistency. Add in the other half bag(6 oz) of the chocolate chips.

  5. Step 5

When cake is cool, ice the cake. YUM!!

Tips & Warnings
  • I always watch my cake closely when baking to make sure I get it done just the way I like it. Overcooked cakes are never too good. You want a nice, moist cake.
  • I always put the cake in the refrigerator when I am finished making it so the chocolate chips in the cake can harden. I like to taste my chocolate chips!
