You may call it AMBROSIA, but on Guam it’s simply called fruit salad. The variations are slight and the yummy combinations of fruit and textures are endless. This particular recipe is what my family enjoys most. Whip it up and it will be a hit at the next get together! Enjoy!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • cool whip 1 large tub (chilled)
  • Philly cream cheese ½ stick (room temperature)
  • 1 large can fruit cocktail
  • fruits (chopped) of your choice
  • mini marshmallows
  • coconut gel/coconut sport (Filipino specialty) 1 jar each
  • sliced almonds or walnut pieces
  • colander
  • large mixing bowl
  • spoon/flat spatula
  1. Step 1

Gather ingredients and DRAIN fruit cocktail, coconut gel and sport (basically coconut strips) in colander. This may take 15 minutes as you prep the other ingredients.

  2. Step 2

With CREAM CHEESE at room temperature, place in bowl and cut or smash into the bowl. If you merely try to mix the cream cheese with the cold cool whip it will harden and you will get large tart chunks in your bite. My recipe calls for ½ stick, but you may add more or less as desired.

  3. Step 3

Add COOL WHIP and mix well. A flat spatula works best.

  4. Step 4

Add drained fruit and coconut items. MIX WELL. The mixture will seem loose, but with the addition of the remaining ingredients, it will be thicker.

  5. Step 5

Also add any diced fresh fruit you like (strawberries and pineapple are great). Mix.

  6. Step 6

Add NUTS and mix again. With mini marshmallows, the amount is up to you. I add this ingredient last so it can thicken the mix so to speak.

  7. Step 7

Place salad in desired serving bowl. I typically decorate the top of the salad with marshmallows and nuts (so those allergic to nuts will see that it is in the mix). Feel free to add food art if that’s your forte.

  8. Step 8

COVER or plastic wrap the bowl and REFRIGERATE for one hour minimum.

Tips & Warnings
  • If I’m taking this to a party, I will place the fruit salad in the freezer for a few hours so it remains chilled.
  • Kids will have fun making this recipe.
  • You may opt for less fat cream cheese or light cool whip for a healthier option.
