How to make Grilled Bruschetta Chicken

This is a easy and delicious chicken dinner, great for any time of the year, great for a summer grill. Hope you enjoy this as much as our family does.

Instructions

Things You'll Need:

  • 1 tomato, finely chopped
  • 1/2 cup shredded mozzarella cheese
  • 4 small boneless skinless chicken breast, halves about 1 lb.
  • 1/4 cup fresh basil, chopped or 1 tsp dried basil leaves
  • 1/4 cup sun-dried tomato vinaigrette dressing, divided
  1. Step 1

    Put a large sheet of heavy foil over half of your grill grate. Then preheat it to medium. Pour 2 tablespoons of the dressing over the chicken and place into a plastic bag with a seal. Toss the chicken with the dressing and coat it evenly. Put into the refrigerator for approximately 10 minutes to marinade.

  2. Step 2

    After 10 minutes remove the chicken from the bag and grill on the uncovered side of the grill for about 6 minutes. While the chicken is grilling mix the tomatoes, cheese, basil and the rest of the dressing. Turn the chicken over and place cooked side up on the foil side of the grill. Place the tomato and cheese mixture over the chicken. Close the grill and grill about 8 more minutes or until the chicken is no longer pink, about 170 degrees.

  3. Step 3

    Carefully remove the chicken from the grill and immediately serve. Side suggestions can be a nice rice or roasted red skin potatoes, or a light salad. This will soon be a family favorite!
