Nicely golden cottage cheese and onion pie

This is an adaptation of a recipe from the old country. My maternal ancestors from Eastern Europe, Poland to be more precise. A wonderful old pierogi filling handed down and kept alive. In this cottage cheese and onion pie recipe I made it simpler; using the same pierogi filling in a puff pastry wrap. This resembles a pie. A wonderful comfort dish, I'm happy to share. Enjoy!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 large 16 oz. carton of large curd cottage cheese
  • 2 eggs
  • 1/2 finely chopped white onion
  • 3 tsp. freshly ground
  • pepper
  • 2 tsp. cornstarch
  • 1 tsp. garlic salt
  • Salt to taste
  • Large sheet of puff pastry
  • Oiled baking dish ~ 9"x9"
  1. Step 1

Mix together: Cottage cheese, eggs, cornstarch, onions, pepper, garlic salt and sea salt.

  2. Step 2

Marinate the cottage cheese mixture for 2 to 24 hours. This step marry's the flavors, it's worth the wait in the end .

  3. Step 3

In an oiled dish spread out puff pastry after leaving it at room temperature until easy to roll out.

Spoon cottage cheese mixture on top of puff pastry and fold in the puff pastry. This is an open top pie, add more puff pastry and even use egg wash to decorate with cut out designs.

on 8/31/2009 I see I will have more use for that puff pastry I'm picking up for that cherry pastry recipe of yours! This sounds great, too! Onion and cottage cheese - sounds like a really nice combo.
