How to Make Delicious Homemade Hummus

Hummus is a traditional Middle Eastern dish that is made from chickpeas (sometimes called garbanzo beans) and tahini (sesame seed and olive oil paste). In many countries it is considered a staple part of the diet. Hummus is high in vitamin C and iron. It is a good source of protein and dietary fiber. It is great for vegetarian and vegan diets, however, is popular among those not observing a vegetarian diet as well.

Hummus is great served as an appetizer; and can be served as a dip and served on flat breads such as pitas. It is also frequently served with falafel (fried ball of ground fava beans and chick peas). It can be served with tomato, cucumber and cilantro for garnish or with grilled eggplant.

Instructions

Things You'll Need:

  • 14oz can of chickpeas, drained
  • 4 Tablespoons tahini
  • 2 - 3 garlic cloves chopped
  • Juice of ½ - 1 lemon
  • Cayenne pepper
  • Pinch ground cumin to taste
  • Salt to taste
  • black pepper to taste
  1. Step 1

    Using a food processor puree the chickpeas - I like it creamy - if you prefer a less smooth texture you can use a potato masher.

  2. Step 2

    Mix the tahini with the chickpeas.

  3. Step 3

    Stir in the garlic, lemon juice, cumin, cayenne pepper, and salt and pepper to taste.

  4. Step 4

    If you would like a thinner consistency add a little water. Adjust cumin and cayenne to your likings. Serve at room temperature.

Tips & Warnings
  • There should be enough olive oil in the tahini - but you may add another tablespoon of olive oil if desired.
  • I like to serve it with a flat bread like a pita. You can also add olives, cucumbers, tomatoes as garnish.
  • Serving suggestions - you can add roasted garlic (see my eHow article)
