Chili is a perfect dish for a cold day. Its an extreamly hearty meal, doesn't cost a fortune to make and it seems to get better the longer it sits. Below is my recipe for a good Chili.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    Ingredients for beef and bean chili:

    2 1/2 pounds boneless chuck roast or stew meat, cut into 1/2-inch pieces
    2 tablespoons of oil
    3 cans (16oz) of pinto beans
    2 cans (16 oz) of beef broth
    1 can (16 oz) of tomato sauce
    2 cans (16oz) of diced tomatoes
    1 onion, diced
    1 bell pepper, seeded and diced
    1 red bell pepper, seeded and diced
    2 1/2 tablespoons of chili powder
    1 teaspoon of oregano
    1 teaspoon of cumin
    1 teaspoon of dried thyme
    1/2 teaspoon og ground sage
    1 teaspoon of powdered garlic
    1/2 teaspoon of black ground pepper
    1/4 teaspoon of cayenne pepper

  2. Step 2

    To begin with you will want to heat the oil in heavy duty large stock pot over a medium heat. Add the beef, and onion and then cook until the beef is evenly browned, stirring occasionally.

  3. Step 3

    When the beef has browned you need to pour off the drippings to get rid of any grease so you don't have a greasy taste in your chili. You will then want to add in the pinto beans, beef broth, tomato sauce, diced tomatoes, diced red bell peppers, chili powder, oregano, cumin, thyme, sage, powdered garlic, black pepper and cayanne pepper to the pot. Partly cover the pot and then reduce heat to a low to a medium-low heat and then simmer for 1 1/2 to 2 hours stirring occasionally until the beef is tender and all of the flavors have blended together nicely.

Tips & Warnings
  • make certain you stir the chili enough so that it doesnt burn.
