Things You'll Need:
- Aunt Jemima Complete Pancake & Waffle Mix
- Water
- Cinnamon
- Mini dark chocolate chips

Step 1
I love making breakfast from scratch but there are days where you are looking for a fast alternative that is still delicious and kid friendly. These cinnamon, chocolate chip pancakes are a perfect idea. I start with Aunt Jemima Original Complete Pancake & Waffle Mix. Just add water! Instructions are given on the box for the mix to water ratio... just decide on your desired amount of pancakes. Put mix and water in a bowl and stir until just smooth. Be careful to not over stir.

I then add a teaspoon of cinnamon. Cinnamon has wonderful health benefits for both adults and children. Studies have shown it helps to regulate your blood sugar and also reduce your LDL cholesterol. I try to add it to as many of our breakfast and baked goods as possible.

Step 3
After spooning the batter onto the griddle, I add about a dozen mini chocolate chips (the very tiny ones!) to each pancake. I say a dozen... because in my house... my children will count to be certain one does not get more than the other!
Dark chocolate has wonderful antioxidants so that is why I opt to go with these mini chips rather than a milk chocolate. I purchase these from the bulk section of our grocery store.
Cook each pancake until golden-brown in color. -
Step 4
I serve these with a real maple syrup that we purchase locally. Enjoy!
