Mango salsa is a delicious variation on the traditional dipping dish. There is no need to go to a fancy restaurant though, since mango salsa is simple and fun to make at home.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 Onion
  • Garlic
  • 3 Tomatoes
  • 1 Jalapeno
  • Other hot peppers
  • salt
  • pepper
  • vinegar
  • 1-2 mangos
  1. Step 1

Cut your onions into whole rings and roast them on the grill with the tomatoes and the peppers. The onions will come off first and the tomatoes last. The tomatoes need to be cooked so that the skin is falling off. I use vine tomatoes or plum tomatoes, not beefsteak, since they don’t have as much taste.

  2. Step 2

The onions should be diced and browned in butter, along with the diced peppers and a few garlic cloves.

  3. Step 3

The tomatoes should be removed from the grill and diced. They should be added to the saucepan with the other ingredients and simmered.

  4. Step 4

Add pepper and salt as you like.

  5. Step 5

Add apple cider vinegar or white vinegar as you like as well. Continue to simmer the ingredients.

  6. Step 6

Dice some mangos and add them to the saucepan. As it simmers, use a potato masher to smash the tomatoes and mangos. This keeps the salsa from being too chunky and makes it more cohesive. You can skip this if you like a really chunky salsa.

  7. Step 7

After the ingredients are well mixed, chill the salsa and serve. Enjoy!
