Make candied or Crystallize ginger candy from ginger root, store and eat as candy, inspired By Alton Brown

Difficulty: Easy
Instructions

Things You'll Need:

  • pan
  • sugar
  • ginger root
  • knife or other slicer tool
  • spoon for skin peeling
  • storage container
  1. Step 1

    Removing the skin is the first step , getting the skin off as you are not going to eat that part of the root

  2. Step 2

    Slice to size of choosing.

    Simmer while covered with water. 30 minutes, this is the softening stage.

  4. Step 4

    Drain water from boil. ( save water that is flavored now for drink making optional.

  5. Step 5

    Add same volume of sugar as there is ginger in weight , plus a few table spoons of water to make a syrup. Alton brown weighs water, I used my hand and got it close to same weight as ginger

  6. Step 6

    Boil and move until water is just gone, medium heat, must stay with it.

    Look for ginger to appear translucent, when that happens remove from water.

  8. Step 8
     

    Cool ginger in rack or plate , pour sugar over all side, or you can roll it in a bowl of sugar.

    Package or they will look like these. As the sugar replaced the water over nigh, it will look like store ginger candy.

Tips & Warnings
  • Save water from first boil and use that for second boil, as that has more ginger flavor.
  • Fresh ginger is best, as I use not so fresh and the colors are not as strong, favor was still very hot.
  • Cut in the shape and size want.
  • Container these candies, as the more it dries the harder it will be sooner.
