Steak Fajitas with Lime Avocado Salsa

You can make fajitas with steak, chicken, shrimp, or even make vegetarian. Here is a quick and delicious recipe for steak fajitas with my home made lime avocado salsa.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    16oz of skirt Steak (four servings)
    4 limes - (1 teaspoon lime peel will come from this as well as juice)
    1 large onion, thinly sliced
    4 large garlic cloves, chopped and pressed
    1 table spoon hot sauce
    4 avocados, pitted & chopped into chunks
    2 tablespoons olive oil
    12 cherry tomatoes, cut in halves
    1 bunch of fresh basil, chopped
    1 bunch of cilantro, chopped

  2. Step 2
    Marinate steak.
     
    Marinate steak.

    First, you want to marinate the steaks. Combine 2 tablespoons lime juice, 1/2 of your onion, 2 cloves of your cut and pressed garlic, hot sauce, olive oil and salt & pepper. Place in a zip lock back along with your skirt steak. Let marinate for 10-15 minutes (the longer the better). Optional: I put 2 tablespoons of tequila in the marinade as well

  3. Step 3
    Make salsa and chill.

    While steaks are marinating, we can make the lime and avocado salsa. Combine your avocado chunks, juice from two limes, cilantro, half of your cherry tomato halves and salt and pepper. Fold together. You want the avocado to stay in chunk form as much as you can. Place in the refrigerator.

  4. Step 4
    Warm Tortillas
     
    Warm Tortillas

    Now, I grill the skirt steaks. I cook for 8-10 minutes on each side. You can also heat some olive oil in a pan. Cook steaks approx. 8 minutes on each side. Let set.
    While the steak is setting warm your tortillas. You can either place them in the oven or warm them on a pan.
    Grab your salsa. Cut your steak in 1/2 inch strips. Remember to cut across the grain in a diagonal fashion.
    Transfer meat to a bowl and serve with your warmed tortillas, salsa, and chips.
