Things You'll Need:
- 8 lbs. red or purple plums
- 7 lbs. sugar
- 1 1/2 gallons lukewarm water
- 2-1/4 oz. pkgs. active dry yeast
- crock or large plastic bucket
- dish towel
- strainer
- bottles & lids for bottling

Step 1
Place whole unpitted plums in a crock or large plastic bucket. Sprinkle with 5 lbs. of sugar. Add water and yeast. Stir vigorously, cover with dish towel and leave alone and let stand for 4 weeks.
DO NOT STORE IN A HOT AREA! -
Step 2
After the 4th week carefully remove plums and any mold that may have formed. Strain liquid into a large bowl. Rinse out crock or bucket. Return liquid and add remaining 2 lbs. of sugar and stir.

Step 3
Stir daily for 3 days. On the 4th day the wine is ready for a sip. Leave stirring everyday for 2 more weeks it is now ready for bottling & serving.

Step 4
To bottle use clean bottles with lids (I keep used wine bottles and clean them out good with a bottle brush, soapy water, rinse, and drain). I use a funnel to keep from making a mess. Fill leaving a 2" space at the top before applying the lid. Store in a cool area. This recipe makes about 2 gallons.
