How to make an Easy Chicken Casserole

This is a simple and delicious chicken casserole recipe. It can be baked in the oven, or made in the crock-pot. It will become one of your family favorites, and will be one that the whole family will want for left-overs!

Instructions

Things You'll Need:

  • Ingredients: 2-3 cups precooked chopped chicken, 1 can Cream of Chicken Soup, 8 oz. Sour Cream, 1 tube Ritz Crackers crumbled up, 1 stick of butter, salt and pepper
  • Tools: Dutch oven, rectangular casserole dish, small bowl, microwave, mixing bowl, large spoon or spatula, and a can opener
  • 350 degree oven
  • about 1 hour
  1. Step 1

    Prepare your workplace, and get out all of your kitchen tools needed, then get out all of our ingredients.

  2. Step 2
    1-2lbs. chicken or 3-4 breasts
    1-2lbs. chicken or 3-4 breasts

    Start by boiling water in a large pot on your stove. When the water boils, throw in 1 teaspoon of salt to season it. Then put in 1 to 2 lbs. chicken, or 3 or 4 breasts. Let this boil for 15 to 20 minutes. Make sure your chicken is cooked thoroughly before removing it from the heat.

  3. Step 3

    When your chicken is cooked, remove it from the pot and chop it. You can chop it finely, shred it, or chop it into small bite-size pieces. You will need to have about 2 or 3 cups of cooked chopped chicken.

    Preheat Oven to 350 degrees

    At this point, you will want to preheat your oven to 350 degrees.

    Cream of Chicken Soup

    Put your chopped chicken into your mixing bowl. Add your can of cream of chicken soup, making sure you get all of it from the can into the bowl.

    Add your 8 ounces of sour cream, also making sure you get all of it from the container.

    Stir this mixture until it is thoroughly blended. It should be a light yellow color and very creamy. At this point, you can add your desired amount of salt and pepper to the mixture.

    Put your stick of butter into a microwavable bowl and put that into the microwave for about 30 seconds. Keep doing this until your butter is completely melted.

    Ritz Crackers
    Ritz Crackers

    Take your single tube of Ritz Crackers and put them all into a sturdy zip lock bag and break them up completely. You can just take out 4 or 5 crackers at a time, break them up and drop them into the bowl with the butter, but that is a bit messier. Put the broken crackers into the bowl of melted butter and mix them together, making sure all the crackers are moistened.

  10. Step 10

    Take your bowl of chicken mixture and place it in your casserole dish. You will have to spread it out evenly in the dish. Make sure you spread it into the corners.

  11. Step 11

    Spread your cracker and butter mixture evenly on top of the chicken mixture in your casserole dish.

  12. Step 12

    Bake for 25-30 minutes in a 350 degree oven. Your crackers should be a darker golden brown, and the chicken mixture should be bubbling around the edges.

    Serve with a serving spoon, be careful, it's hot!! And enjoy!

Tips & Warnings
  • This can be prepared in advance and baked at a later time.
  • You can purchase precooked sliced chicken to save time. This wouldn't be my first choice, but if you have to, chop it up a bit before adding it to the recipe.
  • You can use any of the "cream of" soups, but the chicken flavor will give you the best flavor for your casserole.
  • Please use caution when working with raw meats. Remember to wash your hands and utensils thoroughly.
