Things You'll Need:
- Non-stick skillet
- pam non-spray
- medium size bowls
- Can or Fresh (Filet)Salmon
- Flour Tortillas
- Fresh Cilantro
- Sm. Red Onion
- Red and Yellow Bell Peppers (optional)
- Sm. Cabbage
- Lg. Navel Orange
- 1 Lime
- Chili Powder
- Kosher Salt
- Pepper
- Sour Cream
- Extra Virgin Olive Oil
- Rice Vinegar

Step 1
Shed 1/4 of the cabbage in a bowl. Finely chop 1/2 of the onion, 1/4 of red and yellow bell pepper adding it to the shredded cabbage. Add about 3 Tbsp. of olive oil and vinegar. Season with kosher salt and pepper to taste. Refrigerate until need.

Step 2
The Salsa
Peel orange and line leaving no white on either fruit. Taking the knife slicing the orange between each section. Repeat the same process with the lime. Putting the fruit in a bowl adding a pinch of salt and pepper. Chop 1tsp. of cilantro and add to orange mixture. Set aside in refrigerator. -
Step 3
Sour Cream
Chop 1tsp. cilantro add to sour cream. Add just a dash of salt and pepper. -
Step 4
Shell Bowl
Using a medium size micro wav able bowl spray with pam on the out side of the bowl(this is use to shape the shell). Lay the tortilla on the sprayed side of the bowl. Place on a cookie sheet and put in the oven until lightly golden at about 350 degrees. Once golden remove from oven allow to cool before removing from bowls. To maintain it's shape. -
Step 5
Salmon
With fresh salmon season with salt & pepper, 1/2 tsp chili powder, 1 Tbsp. olive oil, and 1tsp. rice vinegar. ( Canned salmon drain water put in skillet with all ingredients. Salmon just need to be warmed). Rub ingredients into salmon as if you were massaging it. Cut in 1 1/2" in width. Place skin side down in heated oil skillet. Cook for 8 minutes on a medium fire. The skin may burn a little, but don't worry and do not flip salmon. Once done remove skin and crumble into shell. -
Step 6
Serving
Place cooled shell on plate. Fill with cabbage mixture. top with crumbled salmon add salsa and top with sour cream.
