Things You'll Need:
- 2 c Chicken Breast, chopped
- 1 c green pepper
- 1 8oz pkg Cream Cheese, cubed
- 1 8oz jar Salsa (split in half)
- 6 Flour Tortillas
- 2 c Shredded Cheddar Cheese

Step 1
Cook chopped chicken breast until throughly cooked. While the chicken is cooking you may go ahead and chop up the green pepper into bite size pieces.

When the chicken is done add the chopped green pepper, cream cheese, and 1/2 of the salsa (4 oz.) to the pan with the chicken. Cook on low heat until the cream cheese is melted.

Preheat oven to 350 degrees. Spoon about 1/2 cup of the chicken mixture in the center of each tortilla and roll each one up separately. Place in a lightly greased 12 by 8 inch baking dish.

Step 4
Place the shredded cheese on top of each rolled tortilla. When finished cover with foil and place in preheated oven. Hake for 20 minutes or until thoroughly heated.

Step 5
Remove enchiladas when heated thoroughly. Top with remaining salsa. You may garnish with sour cream or your choice of garnish, if desired. Enjoy your amazingly delicious chicken enchiladas!
