How to make delicious coconut shrimp

Instructions

Things You'll Need:

  • 1 pound uncooked jumbo shrimp
  • 1/4 cup all purpose flour
  • 2 egg whites
  • 1 1/2 cup flaked coconut
  • oil
  • 1 jar pineapple preserves
  • 1 tablespoon coconut liquor
  1. Step 1

    First you will need to peel and devein the shrimp. Then you will need to make a slice down the middle of each of the shrimp. Then you will need three bowls. One you will place the flour in the other the coconut and the other the egg whites that you have lightly beaten. Then you will need to coat the shrimp in the flour then in the egg and then in the coconut.

  2. Step 2

    Then you will need to preheat your deep fryer or electric skillet to 375 degree. Then you will need to fry the shrimp a few at a time. You will need to fry each of the shrimp for 1 to 2 minutes on each side or until they turn golden brown. Then you will need to drain the excess grease off of the shrimp by draining on paper towels.

  3. Step 3

    Then in a small bowl you will need to combine the pineapple preserves and the coconut liquor and serve for dipping the shrimp in. This is a delicious quick recipe that is a great recipe for an appetizer that you need to make in a flash. If you have children eating you can omit the coconut liquor.
