Things You'll Need:
- 2 tablespoons butter
- 4 cups chicken broth
- pepper
- 1 3/4 cup shredded cheddar cheese
- 2 thin sliced green onions
- 1/4 cup sour cream
- 2 pounds butternut squash
- dried thyme
- 2 medium onions
- teaspoon chopped garlic

Step 1
First you will need a large sauce pan. You will add the onions into the pan with the butter and sauté until the onions are tender. Then you will need to peel, seed, and cube the squash and add to the pan. You will then need to add the broth, dash of pepper, and a dash of thyme. Then you will need to bring to a boil.

Once the pot has reached a boil you will need to cover the pan and simmer for 15 minutes or until the squash is tender. Then you will need to allow this mixture to cool to room temperature. Then you will need a blender. You will then need to place the squash mixture into the blender and cover. Process in the blender until the mixture is smooth.

Then once all of the squash in blended and is smooth you will need to return to the pot and bring to a boil. Then let cook over low heat and then stir in the cheese. Then cook until the cheese is melted. Then you will need to add to bowls and garnish with a dap of sour cream and green onions.
