If you Love going into a restaurant and ordering Chicken Tortellini soup..You will love to know it is So simple to make at home. I will show you some easy steps and shortcuts to make it in less than an half an hour!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2-4 cups of water
  • 1 quart Chicken broth
  • 1 can sliced carrots (drained)
  • 4 chicken breasts uncooked with bones. (skin removed)
  • 4 stalks celery (diced small)
  • 1 small onion cut in half. One half diced, the other in big chunks.
  • 1 bag of frozen tortellini (any variety.)
  • parmesan cheese.
  • 3/4 lb bag of spinach leaves washed, and chopped. Can use frozen or canned just make sure they are rinsed, chopped and drained
  • Salt, Pepper, Onion powder, Garlic powder, poultry seasoning.
  • Spaghetti pot (or a pot that a colander will fit in, or a steamer)
  1. Step 1

    Place insert (colander) in pot. Place chicken, 2 stalks of the Celery, coarsely chopped, chunked onion, into the insert. fill with water just to cover chicken. Place on stove on high heat to boil. Allow to boil until chicken is cooked (about 15 min)Remove insert, rinse under cold water to cool chicken. (Do not dump water that was in the pot. This is a basic stock) Turn down the heat on the stock in the pot to Med heat (6) to keep things still cooking.

  2. Step 2

    Remove the chicken from the colander, separate it from the bone, chop into 1/2 inch pieces. place back in the pot with your basic stock. (do not use colander in this step)

  3. Step 3
     

    Pour Chicken broth into the stock. Place tortellini, and remaining celery, onion, in the pot. Cook until tortellini is almost done (approximately 10 min), add spinach, carrots and spices to taste. Continue until tortellini is finished cooking(approximately 5 min)..Top with parmesan cheese before serving.

Tips & Warnings
  • You can add any vegetables you like to the soup. Mix it up, add your own flair.
  • You can use plain deboned chicken breasts to make the meal go quicker.
  • If the water evaporates below the level of the chicken, add more Hot water until chicken is covered again.)
