How to Cook Laotian and Thai Sticky Rice

Sticky rice or Glutinous rice is the main rice eaten in Laos and Northern Thailand. The Laotian name for it is "khao niao" broken down "khao" means rice, and "niao" means sticky. It is traditionally eaten with your hands. Sticky rice is also used in various Thai and Laotian desserts.


How to cook stick Rice:
(2 cups of rice will serve 4 people)

Instructions

Things You'll Need:

  • Sweet rice or Glutinous rice (found in most Asian markets)
  • Sticky rice steamer pot
  • Bamboo steaming Basket
  • Water
  • Bamboo basket for serving and storing rice as seen in the picture (optional)
  1. Step 1

    Rinse rice out until water runs clear. This will help wash away any unwanted debris.

  2. Step 2

    Soak rice in lukewarm water for approximately 2 hours or until rice appears less dense and more transparent like. (Tip: Allow at least 2 inches of water to sit above to rice. The rice will soak in the water and expand).

    Fill the sticky rice steamer pot with approximately 2 inches of water. Then place it on the stove top with high heat setting until it boils.

    Pour soaked rice into the bamboo steam basket over the sink allowing the excess water to drain. Next put the bamboo steam basket with rice on top of the already boiling sticky rice steamer pot. Put a lid on it and allow it to steam for 10 minutes on one side.

    After 10 minutes take the bamboo steam basket out of the steaming pot and flip the rice over inside the basket and put the bamboo basket back in the steaming pot. This will allow the rice to evenly cook from top to bottom. Once you have flipped the rice over take a spatula fluff out the rice to allow steam to escape. Put the lid back on and allow the rice the steam for another 5 to 10 minutes.

    Put the cooked sticky rice into the bamboo basket and serve.
