Make Banana Muffins with 90% less fat

Muffins are really yummy, especially banana muffins, but the oil and/or butter found in muffin recipes really add a lot of fat and calories.

This recipe cuts a lot of the fat and calories found in typical muffin recipes by making one simple substitution -- applesauce.

By replacing the butter with applesauce, you have 5 grams of fat less, adding up to about .5 grams of fat per muffin.

Instructions

Things You'll Need:

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 large very ripe bananas
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup applesauce
  1. Step 1

    Preheat oven to 350 degrees. Either coat the muffin pans (12 large) with cooking spray or fill with paper liners. You can also make mini-muffins, but you will have to shorten the cooking time to compensate for the smaller muffins.

  2. Step 2

    In a small bowl, sift the first four ingredients together (flour, baking powder, baking soda, and salt).

  3. Step 3

    In a large bowl, mash down bananas. Bananas should have lots of dark spots or be black on the outside or they're not ripe enough.

  4. Step 4

    Add sugar, egg, and applesauce to the bananas and combine. Fold in flour mixture and mix till moistened (don't over-mix).

  5. Step 5

    Scoop batter into 12 large muffin cups so they're almost level with the top of each cup.

    Bake in preheated oven for 25 to 30 minutes (muffins will be golden brown). Let cool 5 minutes. Remove from muffin pan and enjoy!

Tips & Warnings
  • To decrease cholesterol, try using an egg substitute in place of the egg.
  • You can experiment by adding nuts, cinnamon, nutmeg, vanilla, chocolate chips, whole wheat flour, etc. You might find a new, yummy combination.
  • You might want to double this recipe because they will go fast!
