Step 1
Decide who the hat is for. The yarn you should use greatly varies from one hat to another. Also decide if the hat is for warmth or fashion.

If your goal is to create a nice warm hat look for a thicker acrylic yarn or one that contains wool.

A hat that is for a chemotherapy patient needs to be soft. Caron Simply Soft is a nice soft yarn that is also affordable. For a bit more Vanna's Choice is a nice pick. One skein of Vanna's Choice was enough for me to make 2 adult sized hats with the patter I used.

Step 4
Baby hats also need to be soft. Many parents also appreciate hats that are machine washable so it is good to avoid types that need to be machine washed. There are many soft and machine washable baby yarns that are great for hats. Many baby yarns tend to be thin so they do not provide a lot of warmth. Those yarns make adorable hats but may not be ideal for a winter baby. There are some thicker baby yarns such as Vanna's Choice Baby as well as Red Heart Baby Clouds. The Baby Clouds yarn is super fluffy and works up fast.

Step 5
Hats that are more for fashion then warmth need to be a bit more breathable. A lighter hat can be worn in Spring, Fall, and Winter. In fact sometimes even summer. Lion Brand Cotton Ease yarn is a favorite of mine. Any yarn that is cotton is most likely to be more "breathable" then an acrylic yarn.
