How to Make Old Fashioned Homemade Potato Candy

If you like peanut butter, you will love this candy! My grandmother used to make it for us when we were kids and we loved it so much. It is simple to make and doesn't take a lot of costly ingredients, but it has a taste the whole family will enjoy.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • one small potato, peeled and diced small
  • one bag powdered or confectioner's sugar
  • peanut butter
  • fork
  • mixing bowl
  • zip seal bags or plasic containers with lids
  1. Step 1

    Boil the potato until it is tender. Drain all cooking liquid and let the potato sit in the strainer until the steam goes away and all liquid has dripped away. Put potato into mixing bowl and begin mashing with the fork.

  2. Step 2

    Add confectioner's sugar and mix it into the potato with the fork. Continue until you have a heavy dough consistency. It should be dense and heavy such as children's play dough.

  3. Step 3

    Press the dough out into a 1/4 or thinner layer. Spread a layer of peanut butter over the surface of the dough. Roll dough up jelly roll style. It is easier to eat if you make a wide but short length of dough so that your "jelly roll" will not be too thick. Make several separate rolls if you need to. Cut the rolls into bite size pieces and chill in the refrigerator. You can eat them right away but they taste better cold. These will keep for about a week in the refrigerator, if they last that long before being eaten!

Tips & Warnings
  • You may use the entire bag of confectioner's sugar, that is normal for this recipe.
  • Try using nutella, or other nut spreads for a different taste.
  • Be sure to use only a small potato. You will be suprised how much it will make.
  • This is definitely not a low sugar recipe!
