How to Make Simple Homemade Potato Soup

Potato soup is cheap, easy, and filling. It can be a great companion for grilled cheese sandwiches, or a vegetarian friendly meal. Here is how I make potato soup for my family without breaking the bank.

Instructions

Things You'll Need:

  • 4 cups potatoes, peeled and diced into 1/4 inch cubes
  • 1 large onion, diced
  • water
  • cooking pot
  • 1 can evaporated milk (NOT sweetened condensed milk)or milk substitute used for cooking
  • salt and pepper
  • 2 tablespoons butter or margarine, optional
  1. Step 1

    Dice potatoes and onions, and add them to the cooking pot. Salt and pepper to taste. Cover with water and simmer until potatoes are fork tender. Drain some of the water off.

  2. Step 2

    Add in the can of evaporated milk. (The can should say evaporated filled milk, NOT sweetened or condensed milk.) Stir in and heat through. Add 2 tablespoons of butter or margarine for richness if desired.

  3. Step 3

    Refrigerate or freeze unused portions as soon as they have cooled. Serve with bread and butter, cornbread, or crackers. You can also add ham, bacon, carrots, mushrooms or cheese to make this soup even more hearty. For a thicker soup, add a few tablespoons of instant mashed potatoes after adding the milk.

Tips & Warnings
  • Cut potatoes uniformly to ensure that they cook evenly.
  • Add carrots at the same time as potatoes to ensure that they are fully cooked.
  • Omit butter for a healthier soup.
  • Add chicken stock instead of water for another layer of flavor.
  • Use whatever milk you have on hand if you do not have canned milk, simply reduce the amount of water you leave in the pan before adding the milk.
  • Do not use sweetened condensed milk. Trust me on this one, you will not like the resulting "candy potato soup"!
