Things You'll Need:
- 4 cups potatoes, peeled and diced into 1/4 inch cubes
- 1 large onion, diced
- water
- cooking pot
- 1 can evaporated milk (NOT sweetened condensed milk)or milk substitute used for cooking
- salt and pepper
- 2 tablespoons butter or margarine, optional

Step 1
Dice potatoes and onions, and add them to the cooking pot. Salt and pepper to taste. Cover with water and simmer until potatoes are fork tender. Drain some of the water off.

Step 2
Add in the can of evaporated milk. (The can should say evaporated filled milk, NOT sweetened or condensed milk.) Stir in and heat through. Add 2 tablespoons of butter or margarine for richness if desired.

Step 3
Refrigerate or freeze unused portions as soon as they have cooled. Serve with bread and butter, cornbread, or crackers. You can also add ham, bacon, carrots, mushrooms or cheese to make this soup even more hearty. For a thicker soup, add a few tablespoons of instant mashed potatoes after adding the milk.
