Things You'll Need:
- A perfectly ripe avocado, a small paring knife, (or any small knife, even a bread knife will do) and a metal spoon, teaspoon or tablespoon size.

Step 1
Select an avocado slightly soft to the touch. With the sharp knife slice the fruit vertically in half, going just to the pit and turning it so you've sliced it completely around. Gently separate the two halves with the knife or twist the two halves and they should separate. The pit will remain in one side. Remove the pit by spoon or lifting with the edge of the knife. Save the pit for a later project, (see avocado pit buttons).

Step 2
Holding one of the halves in your palm, carefully make slices through the pulp but not through the skin. Make several slices as many as six or seven, about 1/4" thick.

Step 3
With the metal spoon, carefully scoop the slices out in one swoop and slide onto your plate or a lettuce leaf and fan out into a beautiful blend of greens. Squeeze some lemon juice on the slices to help retain color and enhance flavor. Repeat the process for the second half.
