Things You'll Need:
- 1 ½ Stick unsalted, sweet butter
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ¾ teaspoon salt
- 1 cup sugar
- 3 large eggs
- 3 bananas (mashed)
- 2 apricots (chopped)
- 1 cup mixed frozen berries (let the berries thaw for a few minutes)
- ½ cup dried cranberries and raisins
- ½ cup mixed nuts (unsalted)

Step 1
Preheat oven to 350 degrees. Butter a 9 by 5 by 3- inch loaf pan and set aside.

In a medium bowl whisk together the flour, baking soda, baking powder and salt.

In your electric mixer bowl cream the butter and sugar until soft. Pour in the vanilla extract. Add eggs one at a time and beat on low speed.

Next, add the dry mixture; flour et al. Again mix on very low speed.

Remove the bowl from the mixer and add the fruit; starting with the bananas, apricots and finally the frozen berries. Gently mix the fruit in with your hand. Do not beat with a mixer. Lastly add in the dried fruit and the nuts.

Pour the batter into a prepared pan (note that the batter will be on the thicker end) and bake for about 80 minutes, or until a toothpick inserted in the middle comes out with only a few moist crumbs attached. Let the bread cool for ten minutes or longer depending on your taste.
