Things You'll Need:
- An oven preheated to 350 degrees
- A greased loaf pan
- 2 mixing bowls
- A fork or pastry blender
- A spatula or mixing spoon
- Measuring cups and spoons
- Ingredients:
- 3 ripe bananas
- 2 eggs
- 2/3 cup brown rice flour
- 2/3 cup sorghum flour
- 5 TBSP potato starch
- 3 TBSP modified tapioca starch (or plain)
- 1/2 cup agave nectar
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp xanthan gum
- 1/2 cup chopped nuts, if desired

Step 1
Put all of the dry ingredients into one of the mixing bowls and mix with spatula or spoon until well combined.

In the other bowl, mash bananas well with fork or pastry blender. Add eggs and agave nectar and mix thoroughly.

Add dry ingredient mixture to banana mixture and mix very well, add nuts if you like.

Pour batter into greased loaf pan and bake in preheated oven for about an hour, or until a toothpick poked into the middle comes out clean.

When done, cool in pan a few minutes, then remove the loaf and allow to cool on a rack.

Serve warm or cooled, and store in an airtight container.
