There aren't too many things better than a big, fat, chewy, soft cookie and this is the world's best recipe for Oatmeal Raisin.

Instructions

Things You'll Need:

  • 1/2 cup butter, softened
  • 1/2 cup butter flavored shortening
  • 1 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 small package instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup raisins
  1. Step 1

    Preheat oven to 350 degrees F (175 degrees C).

    Plump raisins by putting them in a microwave-safe bowl and adding just enough water to cover. Microwave for 1-2 minutes, cool, and drain.

    In a large bowl, cream together the butter, butter-flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth.

  2. Step 2

    Combine the flour, vanilla pudding mix, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and plumped raisins. I like to use a medium-sized ice cream type scoop to drop the cookies onto ungreased cookie sheets.

  3. Step 3

    Bake 10 to 12 minutes until golden brown, taking care to not overbake. Let them cool for just a bit before removing from cookie sheets to cool on a baking rack. Store in airtight container to keep them chewy.

Tips & Warnings
  • Regular shortening is good, but butter flavored shortening is better!
