Things You'll Need:
- Cookie sheet; gingerbread boy cookie cutter (or others as desired); can of vanilla icing; hand mixer; box of cake mix (spice or other to fit preference); 1 egg; 1 stick of margarine; spoon or spatula;

Step 1
Begin by assembling all ingredients and materials. Next melt one stick of margarine (I use Blue Bonnet) in a medium mixing bowl and add one egg (slightly beaten), and one box of dry cake mix. Mix all ingredients together with hand mixer or just with a wooden spoon.

Use a clean counter top or wax paper to roll out the cookie dough. Spread flour on the counter or wax paper to prevent cookie dough from sticking. Roll the dough into a rectangle to about 1/4 inch even.

Use your gingerbread man cookie cutter (or others) and starting at the edge, cut our dough placing cutters close together to get the most for your efforts. Use a spatula to transfer cut-outs from the counter to the cookie sheet. Use hand to re-ball dough and roll again.

Continue rolling and cutting until dough is all used. Bake cookies on 325 degrees for 8-10 minutes. Do not over cook. They will harden more as they cool.

Once cookies are cooled, use canned icing and candy pieces to decorate. Grab a cup of milk and enjoy! This recipe will make 18-24 cookies depending on size of the cookie cutter. This is the perfect amount to enjoy and not be overwhelmed!
