How to make sugar-free Diabetic Date Cookies

This is a recipe for some sugar-free Date Cookies. My Grandmother is a diabetic and she loves these cookies. Even my kids really enjoy them. They are very simple to make and would make a great homemade, sugar-free surprise for any diabetic.

Difficulty: Moderately Easy
Instructions
  1. Step 1

    You will need the following ingredients to make these cookies:
    18 half pecans or 9 whole pecans
    1/2 of a stick of butter or 1/4 cup butter
    24 dates
    1 teaspoon vanilla
    4 small packages of sweet and low
    2 Tablespoons of water
    1 cup of Rice Krispie Cereal

    Be sure to have all ingredients ready before you start cooking.

  2. Step 2

    Bring the 2 tablespoons of water, the dates, and the butter to a boil, stirring constantly.

  3. Step 3

    Once the mixture is boiling, add the vanilla, rice krispies, sweet and low, and the pecans.

  4. Step 4

    Divide the mixture into twelve equal pieces and place on a cookie sheet. Bake at 350 degrees in a pre heated oven for 5 to 10 minutes.
