How to Make a white sauce for fish

  • 1 1/2 cups chicken or vegetable stock
  • 1 cup white cooking wine
  • 1 teaspoon mustard
  • Heavy cream

      Place wine and stock in a saucepan. Place over high heat and allow to boil until liquid is reduced by half.

      Remove from heat and add fresh lemon to taste.

      Reduce heat on stove and replace pot. Allow sauce to simmer for a few minutes and slowly add heavy cream until sauce reaches a consistency that is to your liking. This can take a few minutes; just make sure that the pot is simmering as you add the cream.
