How to Make a white sauce for fish

Things You'll Need
- 1 1/2 cups chicken or vegetable stock
- 1 cup white cooking wine
- 1 teaspoon mustard
- Heavy cream
- 1 fresh lemon

Place wine and stock in a saucepan. Place over high heat and allow to boil until liquid is reduced by half.

Remove from heat and add fresh lemon to taste.

Reduce heat on stove and replace pot. Allow sauce to simmer for a few minutes and slowly add heavy cream until sauce reaches a consistency that is to your liking. This can take a few minutes; just make sure that the pot is simmering as you add the cream.

Add 1 teaspoon of mustard and mix well as soon as the desired consistency is reached.

Allow sauce to cool and spoon over any light fish, or freeze for later use. This sauce works best with tilapia and flounder.
