How to make authentic mexican Guacamole

Authentic Mexican guacamole, no onion no tomatoes, no dairy. Authentic as my Grandmother used to make it.

Instructions

Things You'll Need:

  • 1 Avocado
  • 1 Garlic clove
  • 1 to 3 serrano chilies
  • 1/2 tbs of salt
  1. Step 1

    Roast the garlic and the serrano chili ( one is very mild and the more you add the more spicy) on a pan, no oil please.
    Roast them until the are golden brown you will notice the smell.

  2. Step 2

    On a mortar add the salt, the garlic and the chilies and mashed until is a soft paste. You can use a coffee grinder or small food processor (couple of pulses will do the job you will need some water 1/2 to a 1 tbs).

  3. Step 3

    Cut your avocado in half and with a spoon, scoop the meat out put it in a bowl and with a fork mashed it down to small chunks, or very soft paste (depending how to like it) add the chili-garlic-salt paste and mix until they are perfectly combine. And voile!! is ready for your dish or your tacos.

Tips & Warnings
  • If you cannot find serrano chilies in you area get a jalapeno
  • To avoid you guacamole getting brown (oxidation) squish lemon or lime juice make sure you cover the whole top of it, few drops will do the job.
  • Do keep an eye on you roasting garlic and chilies or you can burn them and that will make you cough like you never had before.
