    English Muffins Recipe
    Makes about 18 servings

5 cups all purpose flour (separated)
    2 packs dry yeast
    2 tablespoons sugar
    2 teaspoons salt
    2 cups water
    1/2 cup shortening
    corn meal

  3. Step 3

Combine all the 3 cups flour, yeast, sugar, and salt in a large bowl.

In a large sauce pan heat the water and shortening to between 120 and 130 degrees. Add the flour mixture and beat with a mixer for three minutes on medium speed. Add additional flour up so that the dough is stiff. Note up to 3 additional cups of flour can be added if necessary.

After dough is a stiff mixture, kneed it by hand for 8 minutes until the dough isn't so sticky any more.

Flip dough out on floured surface and roll dough out so it's 1/2" thick. Use your round cookie cutter or an empty clean tuna can to cut rounds.

Sprinkle 2 cookie sheets with corn meal. Place the dough rounds on the cookie sheet and sprinkle with corn meal. Cover loosely with plastic wrap and let the dough rise for 30 - 45 minutes.

Heat a fry pan on medium high. Then corn meal should prevent them from sticking. Cook english muffins 5 minutes per side until they are light golden brown.

When english muffins are cool enough to handle, cut them in half and toast.
