Things You'll Need:
- Mahi Mahi
- Rice
- Red Pepper/Onion Salsa
- Olive Oil
- Garlic Powder
- Lemon
- Salt/Pepper

Step 1
Use a great marinade on your Mahi Mahi!First of all, you will want to marinade your Mahi Mahi. In a baking dish, pour some olive oil, sprinkle in some garlic powder, salt and pepper and put in either fresh squeezed lemon or a bit of lemon concentrate. Mix that all together. Then, place the fish in it and coat the fish with the marinade. Let that sit for about an hour. At that point, bake the fish in the oven at 350 degrees for about 30 minutes. Turn them over at 15 minutes.

Use any type of rice you like!While your fish is cooking, make some rice. It is your choice whether you use white, brown, wild, long grain, etc., rice. I personally like the taste of white rice so I put it in my rice cooker and make about 3/4 cup of rice for each person. Making rice is easy for every cup of rice, you put in a cup of water and spoon in some butter while it cooks. Depending on what type of rice you cook, there could be slight differences in how you make it so follow the instructions on your rice package.

Red peppers are delicious!I do like red peppers and onion together, but you can find red pepper and onion salsa. It's a bit sweeter than simply using red peppers and onions but if you prefer, just use the vegetables and don't bother with the salsa. However, I'm going to recommend buying the salsa for this recipe if you want to make it like I make it.

Yum!At this point, the Mahi Mahi and the rice are cooked. Take a fork and break apart the Mahi Mahi into chunks. Spoon the rice onto the plate. Put some Mahi Mahi on top of the rice. Pour some of the salsa on top of the Mahi Mahi and then, mix it all together so that the salsa flavor spices up the rice. This is a delicious meal and I hope you enjoy it!
