      Take a couple of golden delicious apples or organic apples purchased from the local farmers market. Core and cut the apples into large diced pieces. Retain the skin of the apple since it contains many healthy properties including a source of fiber to help digestion.

      Wash the baby green spinach in cool running water to remove dirt and pesticides and other potentially carcinogenic or toxic residues. Prepare the spinach by removing the long stems and bruised leaves. Lightly pat dry the washed clean spinach and place in the fridge to keep cool.

      Toss the chopped apple pieces into a bowl of freshly squeezed lemon juice. This will help to prevent the apples from turning yellow. Make the dressing by whisking together the remaining juice, olive oil, apple cider vinegar, honey, salt and ground pepper to taste.
