This recipe makes a delicious 9" X 13" pan of lasagna. There are layers of ground beef and tomato sauce, cream cheese, spinach and mozzarella cheese. It makes 12+ servings and freezes well.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1 clove garlic, peeled and finely chopped
  • 1 6 oz. can tomato paste
  • 1 14 oz. can diced tomatoes with juice
  • 1 teaspoon or more Italian Seasoning
  • Salt and pepper, to taste
  • 1 16 oz. package lasagna noodles
  • 1 8 oz. package cream cheese (regular or reduced fat)
  • 8 oz. shredded mozzarella cheese
  • 1 10 oz. box frozen chopped spinach, thawed and well drained or 1 14 oz. can spinach, well drained
  • 1 large pot for preparing noodles
  • 1 frying pan - medium size
  • 1 9" X 13" baking pan
  • measuring spoons
  • aluminum foil
  1. Step 1

Prepare the lasagna noodles according to the package directions. Drain and set aside.

  2. Step 2

Brown the ground beef, chopped onions, and garlic in the frying pan until the meat is brown. Drain off fat, if necessary. Stir in the tomato paste, diced tomatoes, Italian Seasoning, salt and pepper. Simmer for 5 minutes, stirring occasionally and set aside.

  3. Step 3

Place 1/4 of the lasagna noodles (about 4 noodles) on the bottom of the 9" X 13" baking pan and top with 1/2 of the meat mixture. Add another layer of noodles and top with the spinach. Add another layer of noodles and top with the cream cheese and 1/2 of the mozzarella cheese. Top with the remaining noodles and the remaining meat mixture. Sprinkle with the remaining mozzarella cheese. Top with foil.

  4. Step 4

Bake at 350 degrees for 1 hour. Remove from oven, remove foil and let sit for 5 to 10 minutes.

Tips & Warnings
  • For fast meals, cut the lasagna into serving-sized pieces and freeze. Reheat in the microwave.

on 10/17/2009 This sounds great! And what a wonderful way to get the kids (and dad) to eat their spinach. I would have never thought about cream cheese for lasagne filling - thanks.
