This is how to bake a humming bird cake. This is very a easy cake to make. It's a nice dessert thats not too sweet. It also has a light glaze that can be added. With or without the glaze the cake is very good.

Instructions

Things You'll Need:

  • 3 cups of flour
  • 2 cups of sugar
  • 1 tsp cinnamon
  • 1 tsp soda
  • 1 cup of vegetabe oil
  • 3 ripe bananas-diced
  • 1 8oz can crushed pineapple, drained
  • 1 cup of pecans, chopped
  • 3 eggs beaten
  • Cream Cheese Glaze
  • 8 ounce cream cheese
  • 1 tbs unsalted butter
  • 1 tbs lemon juice
  • 1/2 tsp vanilla
  • 1 tbs each, lemon and orange zest-finely minced
  • 1 1/2 cups of sifted confctioner's sugar.
  1. Step 1

    In a medium bowl, mix first four ingredients together. Add oil, bananas, pineapple, pecans, vanilla and eggs. Mix with an electric mixer for 2 minutes.

  2. Step 2

    Pour batter into a well greased bundt pan, or spray with non stick cooking spray.

  3. Step 3

    Bake at 350 for an hour and 20 minutes.

  4. Step 4

    Check doneness by inserting a tooth pick in the top of the cake, if the tooth pick comes out clean, the cake is done. Cool and remove from the pan.

  5. Step 5

    For glaze, soften cream cheese and mix with the butter. Stir in lemon juice, vanilla and citrus zest. Mix in powered sugar to make icing.
