How to Make a Burrito Casserole

This is a very yummy casserole that will serve 6 to 8 people.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 10 FROZEN burritos
  • 2 to 3 cups of shredded cheddar cheese
  • Spanish rice - 11 to 12 oz. (cooked)
  • picante sauce or salsa - about 24 oz.
  • Oven set to 375 degrees
  1. Step 1

    Turn on your oven to 375 degrees.

  2. Step 2

    Cook Spanish rice as suggested on the box or the package. I use 2 packages of Lipton Fiesta Sides Spanish Rice. Cook as directed and then pour the Spanish rice into the 9 x 13 pan.

  3. Step 3

    Lay the FROZEN burritos on top of the Spanish rice. You might have to cut a few of the frozen burritos in half to have them all fit into the pan.

  4. Step 4

    Pour either picante sauce or salsa all over the frozen burritos until they are smothered. I usually use the mild salsa.

  5. Step 5

    Coat the salsa or picante sauce with the shredded cheddar cheese. I usually layer pretty good. Don't be too stingy on the cheese!

  6. Step 6

    Put the casserole in the hot oven for 45 minutes or what is suggested on the burrito package.

Tips & Warnings
  • After removing casserole, let it sit for 5 minutes. You can eat as is, or you can add shredded lettuce, tomatoes, or sour cream. Enjoy!
