How to Make Healthier Chicken Parmigiana

Chicken parmigiana is a favorite Italian meal. You can make it healthier by not breading and frying the chicken. This chicken recipe is easy and delicious. Even the novice cook can make this dish and your family and friends will want the recipe.

Instructions

Things You'll Need:

  • 2 boneless chicken breasts
  • large can crushed tomatoes
  • 4 fresh basil leaves
  • 4 cloves of garlic - chopped
  • 2 tablespoons extra virgin olive oil
  • 8 ounces of spaghetti- cooked
  • 1 tablespoon tomato paste
  • 6 ounces shredded part-skim mozzarella cheese
  1. Step 1

    Clean the chicken breasts and slice into thin cutlets. In a deep frying pan sauté the chicken in olive oil until the pink is gone.

  2. Step 2

    Add the chopped garlic to the pan with the chicken and olive oil. Over a low flame sauté the garlic for a few minutes. Add the crushed tomatoes and tomato paste. Cover and simmer for 30 minutes. Rip the basil leaves into pieces and add to sauce. Cook for 10 minutes and turn off the heat.

  3. Step 3

    Preheat your toaster oven to 400 degrees. Line the bottom of the pan with a even layer of sauce. Place the chicken on top of the sauce and spread the shredded mozzarella on top of it. Place it in the oven for 5 minutes or until melted.

  4. Step 4

    Serve chicken over cooked spaghetti of your choice. The chicken parmigiana is so juicy from cooking in the sauce that you will not even miss that it isn't breaded and fried. This recipe serves 2 with leftovers.
