Step 1
Beets are a cool-season crop grown for their roots as well as the leafy tops. The type of soil that they prefer is loose soil that is worked deeply so they have room to grow unrestricted. Beets cannot survive well in highly acidic soil, so before planting, add a bit of lime for them.

Beets prefer cool weather and if you live where the winter is mostly frost-free, you can grow them right through until late spring! If you are a canner, you can plant them all at once for a single, large harvest. If you prefer them fresh, you can plant successively every 2-3 weeks for an ongoing harvest.

Planting seeds: Beet seeds are actually a dried fruit! It is a cluster of 3 or 4 seeds which you can plant as is, or if you prefer you can take the time and carefully separate them... Beet rows should be spaced approximately 8" apart. Seeds should be thinned to 2-3" apart when they are approximately 3" tall.

Harvesting Beets: Most beets are at their tastiest when smaller than 2". Beet greens are best when they are 4-6" high. To harvest greens, just snip the tops off with a pair of scissors. For beets, just dig up and store. Do not allow beets to freeze in storage.
